Step by step guidance from Jeff Middleton at www.sbsmigration.com

Do the schema updates as normal AD upgrade from 2003 to 2008.
Join the Win2k8 to the SBS 2003. DCpromo the member server. Replicate
the AD, transfer the FSMO roles, uninstall Exchange, demote the server
remove, etc etc.

If you look at the migration from SBS 2003 to SBS 2011 essentials, the
manual migration/dcpromo steps it talks about are the framework of AD
migration. The minute you transfer the FSMO roles off the SBS 2003 you
have 21 days to finish the migration and get the SBS out of there.

But like he said the bigger issue is Exchange and SharePoint and where
they are going to be.

If you are looking for hosted Exchange, you might want to check out SBS
Essentials, 25 users, built for cloud/hosted email.
